This version of chicken and dumplings is one of the easiest you can find. Just put chicken breasts, cream of chicken soup, diced onion, and water in a crockpot and cook until the chicken is falling apart. Then top it with pieces of refrigerated biscuit dough and cook through. It's hearty and creamy, and if you have any veggies like carrots or celery to use up in the fridge, you can add them, too.
